Recipe for 12 peppery, floral cookies.
250g quick-cooking rolled oats
1 cup pumpkin purée
1/2 cup maple syrup
1/2 cup dried cranberries
2 tsp ground dune pepper
Heat oven to 350°F.
Mix all ingredients in a bowl and adjust the amount of maple syrup and dune pepper to taste.
Shape 10 to 12 cookies with an ice-cream scoop or your hands, half an inch thick, and bake for about 10 minutes.
Cool on a cookie rack and enjoy.
Keep in an airtight container for 3 days at room temperature or 7 days in the refrigerator.
